Method

  1. 01

Make the syrup: simmer the sugar, water and lemon juice for 10 minutes. Off the heat, stir in the honey and orange blossom water, then let it cool completely.

  2. 02

Heat the oven to 170°C (340°F). Mix the walnuts, sugar and cinnamon. Brush a 23 × 33 cm (9 × 13 in) pan with butter.

  3. 03

Lay in 8 sheets of filo, brushing each one with butter. Keep the rest covered with a damp towel so it does not dry out.

  4. 04

Spread half the nuts, add 4 buttered sheets, then the rest of the nuts. Finish with the remaining sheets, buttering each one and the top generously.

  5. 05

With a sharp knife, cut into diamonds all the way through. Press a clove into each piece if you like.

  6. 06

Bake for 50 to 60 minutes, until deep golden and crisp.

  7. 07

Pour the cool syrup over the hot baklava and leave it uncovered for at least 4 hours. The cloves are there for scent; set them aside as you eat.
